This fusion was born in the 20th century when millions emigrated to South America from eastern Asia in order to grow coffee and establish fishing boat cooperatives. Creating their families in these new territories, they began to incorporate their customs and ingredients then absorb the local food culture.
Our Brazilian head chef, Cezar Takahashi comes from a family of these immigrants who pioneered the implementation of fishing boats in Brazil, brings deep knowledge and experience with fresh fish and seafood with a heavy influence of Latin flavors.
